I LAVA YOU…

Santorini is one of the Cyclades islands in the Aegean Sea. The island was the site of one of the largest volcanic eruptions in history which occurred about 3,600 years ago. The eruption left a large caldera surrounded by volcanic ash deposits hundreds of metres deep – forever shaping its rugged landscape. The whitewashed houses of its two main towns, Fira and Oia, cling to cliffs above an underwater caldera (crater). They overlook the sea and small islands to the west as well as beaches made up of black, red and white lava.

The dramatic coastline makes the views stunning for wedding backdrops. It is the place for romance so we thought as it is Valentines coming up we will share the best wedding venues on the island. Covid has put a halt to so many holiday plans which could possibly spread across 2021 so why not plan yours for 2022. The new winery was completed in 1992 in the village of Pyrgos, in a wonderful location on the caldera. They boast one of the most state-of-the-art wineries in Greece technological perfection harmonises wonderfully with the landscape uniqueness of the island. Its innovative architecture is remarkable, as it is built on different levels, just as the famous so-called ‘terraces’ of the vineyard, i.e. the different levels that the farmers have developed in the farms, in order to facilitate the cultivation of the land.

During the wine making process (from receiving the grapes until bottling) they utilise the physical phenomenon of gravity which replaces the use of pumps for the transfer of the must and the wine in order to upgrade the quality of the wines produced. The winery has a capacity of 4,000 tons and is constantly upgraded by investing in new equipment ensuring they always use cutting edge technology in production. In the cellars of the winery, we reserve the largest collection of wines, white, red and Vinsanto that mature in oak barrels.
